🛒 Ingredients
For the Chicken
- 4 boneless, skinless chicken breasts (or thighs)
- 4 tbsp olive oil
- 3 tbsp fresh lemon juice
- 1 tbsp balsamic vinegar
- 1 tbsp Dijon mustard
- 4 garlic cloves, minced
- 1 ½ tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp onion powder
- 1 tsp dried oregano
- ½ tsp crushed red pepper flakes (optional)
- Salt & freshly ground black pepper
- Zest of 1 lemon
For the Broccoli
- 2 heads broccoli, cut into florets
- 2–3 tbsp olive oil
- 3 garlic cloves, thinly sliced
- Salt & pepper to taste
- Zest of 1 lemon
- Juice of ½ lemon
- Optional: 2 tbsp grated Parmesan or nutritional yeast
Yogurt Herb Sauce (Optional)
- 1 cup Greek yogurt
- 2 tbsp fresh dill, finely chopped
- 2 tbsp fresh parsley, chopped
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Salt & pepper to taste
🥣 Instructions
1. Prepare the Marinade
Whisk together olive oil, lemon juice, balsamic vinegar, Dijon, garlic, paprika, cumin, onion powder, oregano, red pepper flakes, salt, pepper, and lemon zest.
2. Marinate the Chicken
- Place chicken in a resealable bag or shallow dish.
- Pour marinade over chicken, coat well, and refrigerate 2 hours–overnight.
- Remove 20–30 mins before grilling to bring to room temp.
3. Preheat the Grill
- Heat grill or grill pan to medium-high (400°F / 200°C).
- Oil grates lightly to prevent sticking.
4. Grill the Chicken
- Grill chicken 6–7 mins per side, until internal temp is 165°F (75°C).
- Turn once; avoid pressing down.
- Optional: brush with reserved marinade or honey-balsamic glaze during last minute.
5. Rest the Chicken
Transfer to a plate, tent with foil, and rest 5–10 minutes.
🥦 Roasted Broccoli
6. Prepare
- Preheat oven to 425°F (220°C).
- Toss broccoli with olive oil, garlic, salt, and pepper.
- Spread on a baking sheet without overcrowding.
7. Roast
- Roast 20–25 mins, stirring halfway, until crispy and browned.
- Toss with lemon juice and zest right after baking.
- Optional: sprinkle Parmesan or nutritional yeast while hot.
🌿 Yogurt Herb Sauce
Mix yogurt, dill, parsley, olive oil, and lemon juice. Season with salt and pepper. Chill until serving.

- Slice grilled chicken against the grain.
- Plate with roasted broccoli or serve over quinoa, farro, or rice.
- Drizzle with yogurt sauce or serve on the side.
